GRAIN-FREE CHOCOLATE CHUNK BANANA BREAD (made with coconut flour, no sugar added, dairy free, gluten free)
Note: You can make this recipe paleo by subbing out the peanut butter for another nut butter (almond, pecan, cashew).
Ingredients
3 very ripe bananas or 1 1/2 cups mashed
3 eggs
1/2 cup coconut flour
1/2 cup peanut butter
1/4 cup liquid/melted coconut oil
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon sea salt
1/2 cup chocolate chunks/chips plus a little more for sprinkling on top (I use paleo Hu Kitchen chocolate)
Instructions
Preheat oven to 350F and prepare a loaf pan with parchment paper. Grease/oil the parchment paper.
In a large bowl mix together mashed banana, eggs, coconut oil, vanilla and nut butter until smooth.
Add coconut flour, baking soda, cinnamon, and salt. Fold in chocolate chips.
Pour batter evenly into the prepared dish. Sprinkle extra chocolate on top.
Bake in the oven for 45-55 minutes. The bread is done when a toothpick comes out clean and when the top springs back to the touch.
