VEGAN + PALEO CHOCOLATE CHIP COOKIES
For 5 years, I lived down the street from an amazing vegan cafe in San Francisco called Nourish Cafe. I loved treating myself to their colorful salads, açaí bowls, and smoothies. And one of my favorite treats was their vegan chocolate chip cookie. I loved that they used only a few simple ingredients, but that the cookie tasted so rich and satisfying. Now that I live on the other side of the country, I had to try to recreate it for myself. I’m not sure what their recipe is, but I’d like to think these come close. They definitely leave me feeling nourished!
Ingredients
2 cups almond flour (I use super fine natural for this recipe, but super fine blanched works too!)
1/4 cup liquid / melted coconut oil
1/4 cup maple syrup
1 teaspoon vanilla extract
1/4 teaspoon baking soda
1/4 teaspoon sea salt
1/4 teaspoon cinnamon
1/2 cup vegan chocolate chips (I use Hu Kitchen chocolate gems and rough chop them)
flaky sea salt for sprinkling (optional)
Instructions
Preheat oven to 350F and prepare a baking sheet with parchment paper.
In a large bowl mix together all ingredients. Fold in chocolate chips.
Scoop and roll dough into balls and then flatten them in to discs between palms. Place them on the baking sheet. I like to make these into smaller cookies, but they are also so delicious as large cookies.
Bake in the oven for about 8 minutes. To see if done, you can check the bottom of one to see that it has lightly browned. Let cool for a few minutes and then place on a cooling rack. Sprinkle with flaky sea salt (optional).
