These 3 ingredient cookies are pretty irresistible and just so easy to make.

Ingredients

  • 1 cup organic unsweetened creamy sunflower butter (you can definitely use ANY nut or seed butter here)

  • 1 cup coconut sugar (or 3/4 cup if you prefer less sweet)

  • 1 egg

  • Sea salt (optional)

Instructions

  • Preheat oven to 350F and prepare a baking sheet with parchment paper.

  • Mix together all ingredients.

  • Scoop (use a spoon, your tablespoon, or a small ice cream scoop to help) and roll dough into small balls. Place them on the baking sheet.

  • Using a fork, flatten cookies by making a criss-cross pattern.

  • Bake in the oven for 8-10 minutes. Let cool for a few minutes and then place on a cooling rack. Sprinkle with sea salt (optional).
