Sweet potato is so yummy and good for you! It is full of nutrients and minerals like vitamin A, vitamin C, potassium, magnesium, and fiber. Sweet potato aids digestion, supports skin health, and reduces inflammation. It’s also a sweet vegetable that can be helpful to include in your diet when you are working to curb sugar cravings.
This is very easy meal prep. Prepare it at the beginning of the week, store in your fridge, and you’ve got a fast and yummy option for meals or snacks.
If you are grain-free or just excited about a bread alternative, this is such a fun vehicle for your favorite toast toppings.
Sweet Potato Toast Variations
Berries + Cream: Dairy Free Cream Cheese and Berry Chia Jam
Avocado: Smashed avocado w/ squeeze of lemon or lime, sliced radish, chopped scallions, micro greens, crushed red pepper, sesame seeds, sea salt
Cream Cheese + Avocado: Dairy Free Cream Cheese, sliced avocado, sesame seeds, scallions, sea salt
Cream Cheese and Veggie: Dairy Free Cream Cheese, thinly scolded veggies (radish, cucumber, tomato)
Everything Bagel: Dairy free cream cheese and everything bagel seasoning
Eggs: Fried, poached, or scrambled…it’s all good!
PB + J: Your favorite nut/seed butter and jam (try chia jam!)
Protein Salad: Top with greens and your favorite protein salad (tuna/salmon/egg)
Ingredients
1 medium/large and round sweet potato
1 tablespoon olive oil, optional
Instructions
Preheat oven to 400F and prepare a baking sheet with parchment paper.
Wash and scrub the potato well. Pat dry.
Slice the potato length-wise into 1/4-1/2 in. thick slices.
Place potato slices on baking sheet, spaced out so that they are not touching. Brush with olive oil (optional).
Roast for about 20-25 mins.
Enjoy immediately with your favorite toppings! Or refrigerate in an airtight container and reheat in toaster or oven throughout the week!
