CHOCOLATE COVERED FROZEN BANANA BITES (vegan, refined sugar free, paleo)

An easy and satisfying frozen treat? Yes please.

Growing up I was pretty committed to ordering “hard chocolate” on my mint chocolate chip ice cream when we would go out to the local ice cream shop (which seemed like a nightly event in my memory of hot east coast summertime in the 90s). I was also (obviously) a big fan of the “magic shell” we kept in our pantry.

When I finally took a gamble and ditched the ice cream to try my neighborhood shop’s chocolate covered frozen bananas, I was sooo amazed at how delicious they were. Who knew a banana could taste so good? I didn't! But now I do, and it turns out it is super simple to make this delicious treat at home. I love choosing the type of chocolate I use and the toppings that make me feel great. I also love these little bites rather than committing to an entire banana. It’s not that I have commitment phobia or anything…

But usually 1 bite is all I need to feel so satisfied. 2 is good too though. Or 3…

Ingredients (makes 20-24 bites)

  • 2 bananas, sliced into 1/2 - 3/4 inch pieces

  • 1 cup chocolate chips (I use Hu Kitchen chocolate gems which are vegan and paleo)

  • Optional: Shredded coconut and chopped almonds, or your favorite topping.

Instructions

  1. Prepare a freezer-safe dish or tray with parchment paper. Place banana slices in dish, making sure the pieces are not touching. Freeze for at least 30 minutes to 1 hour.

  2. After 30 minutes - 1 hour, melt chocolate. You can do this quickly in the microwave. Place chocolate in a microwave-safe glass dish and heat for 30 seconds, stir, and then for another 30 seconds. Stir again and if chocolate is not completely melted, heat for another 10 seconds.

  3. Remove bananas from freezer and dip into melted chocolate. You can use a spoon or a tooth pick to help with this. Place pieces back in dish. If you are adding toppings, sprinkle these on the bottom of the dish/parchment paper and then on the banana bite immediately after dipping in chocolate (the chocolate will cool and harden quickly!).

  4. Put the chocolate covered banana bites back in the freezer and freeze for at least 1 hour.
