SWEET POTATO CHICKEN BITES (paleo, low fodmap, gluten free)

Ingredients

  • 2 cups uncooked sweet potato, finely grated (I use a food processor, a cheese grater works too)

  • 1 lb organic ground chicken (raw)

  • 2 tbsp coconut oil (+ more for greasing the baking sheet)

  • 2 tbsp coconut flour

  • 3 sprigs of green onion, finely chopped

  • 1 tsp sea salt

  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400 F and prepare a baking sheet with parchment paper, lightly greased with oil.

  2. Combine all of the ingredients in a large mixing bowl and thoroughly mix.

  3. Begin forming mixture into small, slightly flattened balls about 1.5 inches in diameter and place them on the baking sheet.

  4. Place in the oven for 25-28 minutes, flipping halfway through.

  5. Crisp further in a pan or place under the broiler if desired for 1-2 minutes to crisp further. Remove from the oven when thoroughly cooked through.

  6. Allow to cool before eating. Serve on top of a salad or pair them with your favorite dip! We like them with homemade guacamole, Fody Salsa, Primal Kitchen Ketchup and Golden BBQ sauce.
