PUMPKIN PECAN PALEO PANCAKES + TAHINI BUTTER
Ingredients
4 pasture-raised eggs
1 cup canned pure unsweetened pumpkin puree
2 tsp vanilla extract
1/2 cup almond flour
2 tbsp flaxseed meal
2 tbsp tapioca flour
2 tsp baking powder
1 tbsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1/4 tsp sea salt
1/4 cup chopped pecans
Or you can always use a mix!
1 cup Birch Benders Pumpkin Spice Paleo Pancake Mix
2/3 cup water
1/4 cup chopped pecans
1/4 tsp cinnamon
Optional toppings:
Chopped pecans
Unsweetened shredded coconut
Raspberry Jam
Maple syrup
Instructions
Whisk eggs together in a large bowl. Add pumpkin and vanilla extract.
Add each of the dry ingredients, stirring together until batter forms.
Heat pan with oil /fat over low/ medium heat.
Cook any size pancake you desire. Flip once.
Top with tahini butter! Find recipe here. You can also add maple syrup, sauce, or jam for more sweetness.
