Ingredients

  • 4 pasture-raised eggs

  • 1 cup canned pure unsweetened pumpkin puree

  • 2 tsp vanilla extract

  • 1/2 cup almond flour

  • 2 tbsp flaxseed meal

  • 2 tbsp tapioca flour

  • 2 tsp baking powder

  • 1 tbsp cinnamon

  • 1/4 tsp ginger

  • 1/4 tsp nutmeg

  • 1/4 tsp sea salt

  • 1/4 cup chopped pecans

Or you can always use a mix!

  • 1 cup Birch Benders Pumpkin Spice Paleo Pancake Mix

  • 2/3 cup water

  • 1/4 cup chopped pecans

  • 1/4 tsp cinnamon

Instructions

  1. Whisk eggs together in a large bowl. Add pumpkin and vanilla extract.

  2. Add each of the dry ingredients, stirring together until batter forms.

  3. Heat pan with oil /fat over low/ medium heat.

  4. Cook any size pancake you desire. Flip once.

  5. Top with tahini butter! Find recipe here. You can also add maple syrup, sauce, or jam for more sweetness.
