EASY GRAIN-FREE GRANOLA
(PALEO, LOW FODMAP, VEGAN, GLUTEN FREE, REFINED SUGAR FREE)
This grain-free granola is loaded with superfoods and is a perfect balance of salty + sweet, crunchy + chewy.
The big clusters are so satisfying AND full of healthy nutrients from superfood seeds, walnuts, pecans, cinnamon and ginger.
Eat this granola as a snack on it’s own, mixed with your fav plant based milk / yogurt, or as a topping on a yummy smoothie or breakfast bowl (like my n’oatmeal!)
Disclaimer: This recipe makes a lot of granola. Good granola. Buuut it may not last long in your kitchen…

It’s perfect by itself! The big chunks are like eating a granola bar.
It’s also perfect mixed with some plant-based milk / yogurt or as a topping on n’oatmeal, a smoothie bowl or pancakes.
Balance. It’s loaded with nutritious plant-based foods, but none of them are overpowering.
Superfood seeds in this recipe:
Pumpkin seeds
Packed with protein, pumpkins seeds have awesome health benefits like boosting immunity, reducing inflammation and many vitamins and minerals like magnesium, iron, and zinc.
Hemp hearts
Hemp seeds add a subtle nutty flavor, contain a lot protein and are high in healthy Omega-3 fatty acids and many other vitamins and minerals.
Ground flaxseed
Flaxseed is an awesome source of fiber, antioxidants, and Omega-3s! Ground flaxseed aids digestion along with promoting heart health, reducing inflammation, and reducing the risk of certain diseases and cancers.
Ingredients
1 cup unsweetened shredded coconut
1 cup raw pecans, roughly chopped
1/2 cup raw walnuts, roughly chopped
1/4 cup raw pumpkin seeds
1/4 cup raw shelled hemp seed
1/2 cup ground flaxseed
1/2 tsp sea salt
1 tsp cinnamon
1/4 teaspoon ground ginger
1/4 cup maple syrup
3 tbsp melted coconut oil
1 tsp vanilla extract
Instructions
Preheat the oven to 325°F and line a rimmed baking sheet with parchment paper.
Combine all the dry ingredients in a medium / large bowl: coconut, nuts, seeds, spices.
In a small bowl stir together the melted coconut oil, maple syrup and vanilla.
Pour the wet ingredients over the dry and combine until evenly distributed.
Spread the mixture evenly on the prepared baking sheet. Make sure the mixture is compact by pressing down and leaving no spaces (like one giant granola bar).
Bake for 15 minutes.
Allow granola to cool and then break into clusters- whatever size you desire! Store in an airtight container / mason jar.
